Paleo Vegan Gluten-Free Chocolate Chip Cookies



These chocolate chip cookies are not only gluten-free, but they are also paleo-friendly and vegan. These cookies are made with dairy-free chocolate chips, almond flour, and coconut flour, so you can eat them without feeling bad.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips

Instructions:

Set the oven to 350F 175C and heat it up

Put parchment paper on the bottom of a baking sheet

Put almond flour, coconut flour, baking soda, and salt in a large bowl

Melt the coconut oil and mix it with the maple syrup and vanilla extract

Mix everything together well

Add the chocolate chips that don't contain dairy and mix them in

Take tablespoon-sized chunks of the dough and roll them into balls

Spread them out on the baking sheet that has been prepared

Press down gently on each cookie ball with a fork to make them a little flatter

Put it in an oven that is already hot and bake it for 10 to 12 minutes, or until the edges are golden brown

After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down

Gluten-Free Oatmeal Blueberry Cookies



These oatmeal blueberry cookies don't have any gluten and are soft and chewy. They are also packed full of juicy blueberries. You can eat them as a sweet treat or as a quick snack on the go. These cookies are tasty and good for you because they are made with healthy ingredients like rolled oats, almond flour, and coconut oil.

Ingredients:

  • 2 cups gluten-free rolled oats
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh or frozen blueberries

Instructions:

Preheat the oven to 350F 175C

Line a baking sheet with parchment paper

In a large mixing bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, cinnamon, and salt

Stir in the melted coconut oil, maple syrup, and vanilla extract until well combined

Gently fold in the blueberries

Scoop tablespoon-sized portions of dough and roll them into balls

Place them on the prepared baking sheet and flatten slightly with your fingers

Bake for 12-15 minutes, or until the edges are golden brown

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely

Coconut Flour Banana Muffins



These Coconut Flour Banana Muffins are a Paleo-friendly and gluten-free treat. They are moist, naturally sweetened, and packed with coconut flavor. You can customize them with optional walnuts and dark chocolate chips for added texture and indulgence.

Ingredients:

  • 3 ripe bananas, mashed
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chopped walnuts optional
  • 1/4 cup dark chocolate chips optional

Instructions:

Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners

Mash the ripe bananas until smooth in a big bowl

To the mashed bananas, add the eggs, melted coconut oil, vanilla extract, and honey or maple syrup

Blend thoroughly

Mix the baking soda, cinnamon, salt, and coconut flour in a different bowl

Stirring constantly, gradually incorporate the dry ingredients into the wet ingredients until a batter forms

Add the chopped walnuts and, if using, the shredded coconut

Pour the batter into the muffin tin that has been preheated, filling each cup about two thirds of the way

You can top each muffin with a few dark chocolate chips, if you'd like

A toothpick inserted into the center of a muffin should come out clean after 20 to 25 minutes of baking in a preheated oven

After letting the muffins cool in the muffin tin for a few minutes, move them to a wire rack to finish cooling
